I've got 32Gb of RAM - maximizing amount of objects

I've got 32Gb of RAM and I assume this is what is been most consumed in Forest Pack and Mental Ray.

Where can I boost up stuff? Max items under Display Tab? Other stuff?

That's it: Display->Max Items and Distribution->Max.Density. You can set both to zero to disable all limits.

What happens when you hit the roof?
What amounts should I keep my eyes on. ie are there any  thumb rules when it comes to amounts and Gb of memory?

If number of items is too high, depending of the render engine, it may take too much time for rendering or generate some error.
Anyway the default limits (1 Mill items and 20 mill density) are high, and should let you to get a very dense distribution.

I suggest you you take a look to this FAQ entry. It includes a technical description about the scattering system, and how to optimize it. The Rendering guide includes some tips as well.
